For a comforting and satisfying meal, consider a dish that combines warm chickpeas, a spicy tomato salad, and homemade flatbreads. Unlike blended chickpea dishes, this version gently heats the chickpeas, giving them a rustic texture that pairs well with tahini, yogurt, lemon, and aromatic spices. The dish is called Musabaha, served with a spicy cherry tomato and coriander salad.

The preparation of Musabaha is straightforward, taking about 15 minutes of prep time and another 15 minutes to cook. Start by draining two 400g cans of chickpeas and placing them in a saucepan with water. After a gentle simmer for five minutes, drain, keeping 300ml of the cooking liquid. For the spicy salad, mix together halved cherry tomatoes, diced cucumber, red pepper, fresh coriander, sliced spring onions, and green chili. Add crushed garlic, lemon juice, white-wine vinegar, olive oil, sumac, dried mint, Aleppo chili, and salt to taste.

To bring the Musabaha together, heat olive oil in a saucepan and sauté crushed garlic until lightly golden, adding chopped chili shortly after. Introduce the chickpeas, reserved cooking liquid, cumin, tahini, yogurt, lemon juice, and salt, and let the mixture boil before simmering gently. Serve the warm chickpeas in a shallow dish, drizzled with tahini and olive oil, topped with the spicy tomato salad, and sprinkled with Aleppo chili. Accompany the dish with warm flatbreads for an immediate meal.

The flatbreads, flavored with turmeric and nigella seeds, require only five minutes of prep time and about 25 minutes to cook. Begin by mixing Greek yogurt with bicarbonate of soda, letting the mixture bubble. Add water, 00 flour, wholewheat flour, turmeric, nigella seeds, and salt, kneading into a soft dough. Divide into eight portions, roll into balls, and let them rest. Roll each ball into a round flatbread, then grill or fry until charred. Brush hot flatbreads with melted ghee or butter.

Serve the golden flatbreads alongside the musabaha, tearing off pieces to scoop up the chickpeas and salad. This dish represents a simple yet flavorful meal, blending warm, creamy textures with fresh, spicy elements, making it a delightful option for a comforting dinner.
